      Here’s some ideas off the top of my head:

      – Slice in half and add chopped yellow peppers and

      onions. Chop up some cubes of mozzarella. Stir in

      your favorite italian dressing (Mine is the Good

      Seasons homemade italian dressing using Balsamic

      vinegar – yum!) and refrigerate for about a 1/2 hour

      to chill.

      – Slice in half and take out the pulp. Heat a pan on

      the stove with olive oil. Add minced garlic and the

      tomatoes. Cook for a short time. Add chopped fresh

      basil and salt. Use this as a tomato sauce for a nice

      flat bread pizza. Yum! OR….add parmesan cheese and

      toss with pasta. Double yum!
