Tomato Sauce with Vegetables:004:
4 tbs unsalted butter
1 tbs extra-virgin olive oil
1 small onion, very finely chopped
1 carrot, very finely chopped
1 celery rib with leaves, very finely chopped
1 tbs parsley
2 tbs tomato paste
2 1/2 cups fresh or canned plum tomatoes, chopped
1/2 tsp salt
black or white pepper, to taste
Warm 3 tbs of butter with the oil in a wide pan over medium-low heat. Add the onion, carrot, celery, and parsley. Saute until the veggies are softened but not browned, 10 minutes. Stir in the tomato paste, the tomatoes, and salt. Simmer, partially covered, stirring frequently until the mixture has thickened, about 40 minutes. Remove from the heat and let cool. Pass the sauce through a food mill, or puree in a food processor or blender or NOT if you like your sauce kinda chunky! Return the sauce to the pan and reheat gently. Stir in the remaining butter and the pepper. Check the seasoning before serving. Makes 2 1/2 cups = about 195 calories per 1/2 cup.
