3T olive oil
1 medium onion, chopped
1 clove garlic, chopped
1T curry powder
1-14.5 can diced tomatoes, undrained
1/4 t salt
1-15-16 oz can chickpeas, rinsed & drained
2 cups torn spinach leaves (or greens of your choice)
4 eggs
Salt & pepper
In large skillet, heat 2 T olive oil and saute onion & garlic til tender, add curry powder and cook 1 minute. Add tomatoes & salt and cook 3 minutes more. Add chickpeas and cook until heated through, about 3 minutes. Add spinach, cook and stir til wilted about another 3 minutes. In another skillet, cook 4 eggs in remaining 1 T olive oil, salt & pepper to taste. Cook eggs to desired doneness. (We like ours soft!) Serve eggs over chickpea mixture.
