      This is a great side for those get-togethers when you’re having a cook-out…lite and easy;-D
      Tomato and Cucumber Salad
      1 lb cucumber
      1 lb fresh, ripe tomatoes
      2 tbs chopped fresh parsley or mint
      2 to 3 tsp finely chopped onion
      2 tbs lemon juice or vinegar
      3 tbs olive or vegetable oil
      salt
      pepper
      Lightly peel the cucumber so that some dark green skin remains, and finely chop it.
      Peel the tomatoes, seed them, and chop them into small pieces. Mix the tomatoes with the cucumber, parsley or mint, onion, lemon juice or vinegar, oil and salt and pepper to taste.
      If time allows, leave the vegetables to marinate at room temperature or in the fridge for up to an hour.
      Serve in small bowls or on individual salad plates. Serves 4-6, depending on other sides.

      Here’s a very similar recipe to yours, but on a slightly larger (family size) scale.

      FreebieQueen…you’re right! The Budget101 version would serve more and may have a sweeter taste than mine;-D
