      Baked ziti and Asian-style slaw

      Meatloaf, boiled potatoes, and broccoli-peanut slaw

      Hot dog chili and coleslaw with blue cheese

      Chicken enchiladas and raisin-almond-carrot slaw

      Chicken pasta bake and red cabbage-apple slaw with spiced walnuts

      Beef and broccoli, rice, and sweet pepper, corn and pepita mix

      Macaroni and cheese with sausage and tangy chile slaw

      Red Cabbage-Apple Slaw with Spiced Walnuts
      2 tbs packed brown sugar
      1 tsp chili powder
      1/8 tsp thyme
      3 1/2 tbs olive oil, divided
      1 cup coarsely chopped walnuts, toasted, warm*
      8 cups thinly sliced red cabbage
      2 Granny smith apples, unpeeled, julienned
      2 tbs balsamic vinegar
      2 tbs orange or apple juice
      3/4 tsp salt
      Combine brown sugar, chili powder and thyme in medium bowl. Stir in 1 1/2 tbs of the oil.

      Add walnuts while still warm. Toss well. Combine cabbage and apples in large bowl.

      Stir in vinegar, orange juice, remaining 2 tbs oil and salt. Add spiced walnuts. Toss.

      12 servings = about 140 calories
      *To toast walnuts, place on baking sheet, bake at 375° for 4 to 6 minutes or until pale brown and fragrant.
      p.s. obviously I’m not making the whole batch! LOL!

      I’m spreading out the cabbage over the week in other recipes and of course I’ll have some for lunches over the next week or so;-)

      Thanks so much! My hubbie doesn’t really like any kind of slaw, but I’m sorry! I’m just gonna have to make this one!
