Currently, breakfast is the only meal I’m in charge of preparing at my house. Thanks to this past week’s shopping trip, I’m well stocked on refrigerated biscuits, cream cheese, muffin mix, and eggs.
Tuesday: Sticky cinnamon bites and fruit salad
Wednesday: Veggie Egg Muffins (making enough for the freezer)
Thursday: Cream Cheese Wedges with cut-up fruit
Friday: Muffins (quick ones from Martha White)
Saturday: Omelets with cheese and whatever veggies are left
The sticky cinnamon bites were kind of like a quick, smaller version of monkey bread. I cut refrigerated biscuit dough into triangles and layed them in a baking dish, with enough room to spread a little. I basted them with melted butter and sprinkled generously with cinnamon & sugar. Bake according to package directions. After baking, I drizzled them with icing (milk & powdered sugar).
I’m allergic to wheat and eggs, so I mostly fend for myself and just graze on whatever fruits/nuts/eggs I feel like eating.
