      Typically, I write menus for 15 days at a time. I always write my menus for all 3 meals plus one snack. Between meal snacks are pretty steady: cheerios, carrot sticks with or without ranch, applesauce, apples, oranges, or leftover anything, for the most part.

      11/10

      Breakfast: cinnamon rolls from scratch
      Lunch: vegetable lasagna loaf
      Dinner: turkey slices with homemade stuffing, sweet potatoes, and corn
      Snack: chocolate peanut butter fudge

      11/11

      Breakfast: quiche (w/ leftover bits of veggies and cheese)
      Lunch: homemade vegetable-alphabet soup
      Dinner: steak, potatoes, veggies
      Snack: potato pancakes

      11/12

      Breakfast: Leftover quiche
      Lunch: Leftovers from prior meals
      Dinner: White beans with rice in a tomato sauce; green beans
      Snack: homemade custard

      11/13

      Breakfast: homemade french toast sticks
      Lunch: lentils and rice served with homemade tortillas, lettuce, tomato
      Dinner: corn chowder; grilled cheese sandwiches
      Snack: cinnamon toast

      11/14

      Breakfast: Pancakes
      Lunch: Meatloaf sandwiches (meatloaf not homemade: from angel food box)
      Dinner: Bean and Bacon soup, cornbread
      Snack: pumpkin bread

      11/15

      Breakfast: Muffins (plain) served with peanut butter, jelly, and / or cream cheese
      Lunch: Leftovers
      Dinner: Bean Cheese Rice Casserole
      Snack: Deviled Eggs

      11/16

      Breakfast: Biscuits and Gravy
      Lunch: 5 Bean Soup (in the crockpot) and corn bread
      Dinner: creamy chicken pasta
      Snack: chocolate chip bread

      11/17

      Breakfast: egg sandwiches
      Lunch: Peanut Butter and Jelly sandwiches
      Dinner: Split Pea Soup (probably some fresh baked bread too)
      Snack: Leftover snacks

      11/18

      Breakfast: Oatmeal
      Lunch: Spamwiches (not the healthiest but we love em)
      Dinner: Leftovers

      11/19

      Breakfast: Overnight casserole (eggs, cheese, bread baked together)
      Lunch: Pasta with Peanut Sauce
      Dinner: Baked Beans on toast with veggies on the side
      Snack: Oatmeal Cookies

      11/20

      Breakfast: Bacon, Eggs, and Toast
      Lunch: Chicken Burritos
      Dinner: mac & cheese from the box…daughter’s bday choice
      Snack:birthday cake and ice cream

      11/21

      Breakfast: creamed eggs on toast
      Lunch: cheese quesadillas (mine with green chili and onion, too)
      Dinner: tuna tetrazinni with peas
      Snack: leftovers

      11/22

      Breakfast: Leftovers
      Lunch: Leftovers or pbj sandwiches
      dinner: steak, rice a roni (from angel food box), green beans
      snack: whatever angel food gives us as a “dessert” item

      11/23

      Breakfast: Pancakes
      Lunch: Chicken and Rice in the crockpot
      Dinner: salisbury steak, mashed potatoes, veggies
      Snack: caramel dumplings

      11/24

      Breakfast: French Toast
      Lunch: Leftovers
      Dinner: BBQ ribs and fries
      Snack: homemade chocolate pudding

      11/25

      Breakfast: Oatmeal
      Lunch: Lentils and Rice, Yeast Rolls, Spinach
      Dinner: Beef patties from Angel food, mashed potatoes, and corn
      Snack: sugar cookies

      11/26

      Breakfast: waffles
      Lunch: Leftovers
      Dinner: Smoked Sausage, Rice, Creamed Spinach
      Snack: vanilla pudding

      11/27

      Breakfast: a light snack of some sort
      Lunch: OUT to eat 🙂
      Dinner: Leftovers from the week
      Snack: Pumpkin pie and egg nog

      11/28

      Breakfast: SOS
      Lunch: Split Pea Soup
      Dinner: Turkey Loaf; Sweet Potatoes
      Snack: Lemon Bars

      11/29

      Breakfast: Oatmeal
      Lunch: mini meatless loaves, carrots and celery sticks
      Dinner: Hobo Soup
      Snack: Leftovers

      11/30

      Breakfast: Leftovers
      Lunch: Pizza (Kids’ Pizza Hut Book It certificates, plus a small pizza for me)
      Dinner: Frozen TV Dinners

      I would love some of these recipes like: 5 Bean Soup & Chicken & Rice in the Crock Pot! 🙂 (If you don’t mind divulging your recipes. 🙂

      Sure!

      5 Bean Soup

      1 lb mixed beans, soaked overnight and cooked for 2 hours on the stove, then drained

      Saute together in 2 tbsp margarine or oil:
      1 chopped onion
      3 minced garlic cloves

      1 stalk of celery, chopped
      a 15 oz can of chopped tomatoes
      a ham hock or leftover ham
      4 cups of broth (I usually use either ham or chicken)
      salt and pepper to taste

      Add all to the crockpot and cook on high for 4 hours or on low all day. Diced potatoes, carrots, and corn all go nicely in this soup, too.

      Crockpot chicken and rice

      Place in crock pot:
      1 1/2 lb boneless chicken

      Combine, then pour over chicken:
      1 can cream of whatever soup (I make my own though)
      1/2 cup water

      Sprinkle over top:
      3/4 cup raw rice

      Pour over rice:
      1 1/2 cups chicken broth

      Cook on low for 6 hours or so.

      No problem…

      Overnight Breakfast Casserole…

      6 slices of day-old bread (a little bit dry)
      1/2 a stick of margarine, melted
      2 cups of milk (use reconstituted powdered milk, it’s cheaper!)
      shredded cheese (about a cup)
      pinch of dry mustard or a squirt of the wet stuff lol
      3 beaten eggs

      Tear up the bread and layer bread — cheese — bread — cheese — bread — cheese in an 8×8 pan (greased). Pour margaine on top. Combine eggs and mustard.

      Pour over bread. Refrigerate overnight. Bake in a 250* oven for an hour or so.

      sos = ____ on a shingle. ___ = bad word for poop. lol

      it’s hamburger gravy on toast. we simply call it sos, as we don’t use bad words in our home but sos is also help! and the meal is certainly a help on the budget. lol
