      Brussels Sprouts Breakfast Hash
      1 sweet potato, diced
      1/2 onion, diced
      1 1/2 cups Brussels sprouts, halved
      1 tbs avocado oil
      1/2 tsp freshly ground black pepper
      1 tbs pure maple syrup
      1/4 tsp crushed red pepper flakes
      4 eggs
      Heat oven to 425°. Place a 10-inch cast iron skillet in the oven to preheat.
      Once skillet is heated, add oil and swirl around the pan to coat. Add sweet potato, onion, Brussels sprouts and black pepper. Stir to coat with oil. Bake 25-30 min, stirring every 10 min or so.
      Remove skillet from oven and stir in maple syrup and red pepper.
      Make 4 holes for eggs.
      Carefully crack one egg into each hole. Place skillet back in the oven and cook for an additional 5-10 min, depending on the preference of cooked eggs…soft or hard.
      Remove from oven and serve immediately. Serves 4
