Tenderloin Steaks with Red Onion Marmalade
1 red onion, sliced and separated into rings
2 tbs red wine vinegar
2 tbs honey
1/2 tsp salt, divided
1 tsp dried thyme
1/4 tsp freshly ground black pepper
4 4-oz beef tenderloin steaks, trimmed (1 inch thick)

In a pan over medium heat, add onion and cook for about three minutes. Add honey, salt and vinegar to pan. Reduce heat and simmer for 8 minutes uncovered
Sprinkle salt, thyme and pepper over beef coating evenly.
Place beef on broiler pan and cook for four minutes on each side (this is for rare, cook longer for personal preference for doneness). Remove to plate. Top with onion mixture, and garnish as needed.
