Taco Tater Tots
32-oz pkg tater tots 1 lb. lean ground beef
6-oz can tomato paste with basil, garlic and oregano
14.5-oz can stewed tomatoes, un-drained
15.5-oz can pinto beans, drained
1-oz pkg taco seasoning mix
1/4 cup water
2.8-oz container French fried onions
1-1/2 cups cheddar cheese, shredded, divided
Heat oven to 350º.
Spread tater tots onto bottom of 13×9-inch pan sprayed with cooking spray. Bake 15 min.
Meanwhile, brown meat in large skillet on medium heat. Drain. Return meat to skillet. Stir in tomato paste. Add tomatoes, beans, seasoning mix and water. Mix well. Bring to boil, stirring frequently. Simmer on medium-low heat 10 min, stirring occasionally. Stir in onions.
Sprinkle 3/4 cup cheese over tater tots. Top with meat mixture and remaining cheese.
Bake 20 to 25 min or until heated through. Serves 10
This is winter comfort food.
