Here’s the one I make and we ALL love!!
1 can sweet yellow corn
1 can pinto beans
1 can dark red kidney beans
1 can black beans
1 can chili beans
1 can great northern beans
1 8 oz. jar of taco sauce
1 jar hot sauce (optional)
1 can (Rotel tomatoes – variety of your choice)
1 package taco seasoning
1 small-med onion chopped/grated/pureed (your choice or just use onion
powder)
1# browned ground beefCombine all ingredients in LARGE stock pot or crock pot/slow cooker. Do NOT
drain beans or corn add ALL liquid to pot. Heat to bubbling, simmer, serve.
Best served with shredded cheese and sour cream and corn chips.Probably our hands down favourite meal around here! The beauty of this
recipe is you can use any bean you like just use 5 cans of beans. You can
control the heat by adding more or less hot sauce & taco seasoning. I have
found the Extra Hot Rotels and the 1 jar of Ortega Taco Sauce Medium give it
a real nice kick and you don’t need the hot sauce. Without the extra liquid
your soup comes out more like chili than soup but that’s ok. To make it go
even further serve over rice or mix in macaroni.Diane
