Taco Chicken
4 small boneless skinless chicken breasts (1 lb.)
4 tsp taco seasoning mix
1/2 lb red potatoes (about 2), thinly sliced
3/4 cup shredded, Mexican 4-cheese blend
1/2 cup thick and chunky salsa
1/4 cup sour cream
Spray crockpot with cooking spray. Place 1/2 cup potatoes in crockpot. Add chicken and sprinkle with taco seasoning.
Top with cheese and salsa. Cook on low for 4-6 hours, checking chicken after 4. Top chicken with sour cream before serving.
