1 cup of AP flour spread in bottom of a flat-bottom pan, preferably a metal handled pan that can withstand 425ºF oven.
Bake flour for 40 minutes to 45 minutes for a deep dark chocolate brown roux. Less time for lighter rouxs. just set your timer and go have a cup of coffee.
immediately remove flour from hot pan to a cold pan to stop the flour cooking.
store roux flour in airtight jar or add water to use immediately.
