Sweet potato casserole is my favorite! My family doesn’t eat them but I still make them because they are delicious.
Bake your sweet potatoes in a 350 degree oven and let them cool enough to handle.
2 cups sweet potato mashed
1/4 cup sugar
1 egg beaten
1/4 teaspoon salt
2 tablespoons butter softened
1/2 cup evaporated milk
1 teaspoon vanilla extract
topping:
1/2 cup brown sugar
1/3 cup flour
3 tablespoons of butter
1/2 cup chopped pecans
Preheat at oven to 325 degrees.
Mix the first 7 ingredients in a bowl until smooth then put in an 8 inch square baking dish.
For the topping mix the brown sugar and flour in a bowl. Cut in the better until it’s coarse. Stir in the pecans and sprinkle the topping over the sweet potato mixture.
Bake for 20-30 min or until the top is lightly brown.
