Sweet Potato Wedges
Toss wedges of sweet potatoes cut from eight sweet potatoes with a little oil and mild herb seasoning. Roast in a 425? oven 30 minutes, or until done.
Reserve left-over wedges for future use.
Sweet Potato Salad
Remove peel from reserved wedges. In a bowl, mix 1 Tbs honey, 2 Tbs honey- or dijon-mustard (your preference — both are excellent), and 1 Tbs mayo. Add 1 small can of crushed pineapple, drained, and mix thoroughly.
Fold in sweet potato wedges. Refrigerate and serve chilled.
