3 C mashed sweet potatoes (yams) 3/4 C sugar 2 eggs 1/2 C milk 3/4 tsp vanilla 1/2 C melted butter (margarine)
Peel and boil sweet potatoes. Drain, cool slightly and mash sweet potatoes. Combine above ingredients thoroughly and pour into oblong cake pan or several smaller pans (if you want to make one with nuts and one without)
In a separate bowl, combine: 1 C brown sugar 1/2 C flour and cut in 1/2 C soft butter or margarine
Once brown sugar, flour and butter are in crumbles, spread across your sweet potato mixture.
OPTIONAL: sprinkle top with 1 C chopped pecans
Bake at 350° for 30 mins or until the middle is somewhat firm.
