Sunny Side Up Breakfast casserole is great for a hungry crowd. It’s best if you don’t make it ahead of time because the hash browns lose their crispyness.
7 Hash Brown Patties
2-3 cups Flat Leaf Spinach, lightly chopped9 Pre-Cooked Sausage Patties
1 bag Shredded Sharp Cheddar Cheese
12 Large Eggs3/4 cup Half and Half
5 medium tomatoes, ends removed, sliced
2 tablespoons Parsley Flakes1 1/2 teaspoons Salt
1 teaspoon Black Pepper
Preheat oven to 350° and coat 13×9-inch pan with nonstick spray.Pan fry the hash brown patties in a skillet according to packaging directions. Crumble the patties and evenly spread them into the 13×9-inch pan once fried.
Cook & crumble the sausage patties.
Top the hash browns with the sliced spinach, in a light, even layer, then with the sausage and half the cheddar cheese.
In a medium bowl, whisk together the eggs, half and half, salt and pepper. Pour over the casserole mix and pat down the mixture with a flat spatula.
Top evenly with the sliced tomatoes and sprinkle with remaining cheese and parsley flakes.
