Summer Berry Terrine
Prep Time: 20 Minutes Cook Time:
Ingredients
4 cups fresh strawberries, sliced
1 cup fresh raspberries
2/3 cup water
2/3 cup SPLENDA® No Calorie Sweetener, Granulated
1/4 teaspoon vanilla extract
Optional Garnish:
Reduced -fat frozen whipped topping
Directions Combine first 3 ingredients in a large mixing bowl; toss
gently.

gelatin dissolves (about 2 minutes). Stir in vanilla. Set aside.
Place saucepan containing gelatin mixture in a bowl of ice water;
stir with a rubber spatula until gelatin mixture is the consistency
whipped cream. Spoon the cream mixture over berries, tossing gently
to coat.
for 45 minutes or until set. Unmold onto a cutting board and slice
into 8 servings. Garnish, if desired.
Strawberry Orange Smash Smoothie10 Minutes Cook Time
Serves: 5
3 cups frozen strawberries, unsweetened
2/3 cup SPLENDA® No Calorie Sweetener, Granulated
1 cup yogurt, plain, non-fat
1/2 teaspoon vanilla extract
Directions Add all ingredients to blender. Blender will be full. Mix
on low speed for 10 seconds. Remove lid, stir with wooden spoon. Mix
high speed for 15 to 20 seconds or until smooth. Pour into glasses.
Serve immediately.
Servings can slightly vary depending on size of fruit.
