Anita’s Strawberry Poke Cake
1 Strawberry cake mix – bake per directions
1 small Strawberry Jell-O
1 Vanilla Instant Pudding
1 pkg frozen Strawberries
1 large container of Cool Whip
Mix the Jell-O with one cup boiling water and
just 1/2 cup cold water. Poke holes in the cake
with a wooden spoon when cool and pour ONE
cup of the Jell-O over the cake slowly as holes are
punched.
In large mixing bowl mix frozen strawberries, the
rest of the Jell-O and stir, blend in the Vanilla pudding,
Cool Whip and blend well. The mixture will set-up like
icing. Mix while cake is cooking and place in the fridge
or freezer for few minutes.
Spread on thickly.
Optional – place fresh strawberries on top of cake for decorations, and also
optional crushed pecans can be
added to the icing mixture. You usually end up with more
icing than you really need, so I use graham crackers and
use the remainder for dipping/snacking.
Something else that I have tried and found really delicious
is taking Triskit Crackers, spread some strawberry cream
cheese on it and top with a slice of banana…makes good
finger food for parties and picnics. Not very much sugar
so I guess it would be considered a healthy snack. Kids
would have fun making these snacks, too.
