Strawberry Fields No-Bake Cheesecake
12 graham crackers, finely crushed
6 tbs margarine, melted
1 cup plus 2 tbs sugar, divided
4 8-oz pkg cream cheese, softened
1/2 cup strawberry preserves
2 cups fresh strawberries, chopped
8-oz tub frozen whipped topping, thawed
Mix graham crumbs, margarine and 1/4 cup sugar. Press onto bottom of 13×9-inch pan. Refrigerate while preparing filling.
Beat cream cheese and 3/4 cup of the remaining sugar in large bowl with mixer until blended. Add preserves. Mix well.
Mash strawberries with remaining sugar until blended. Add to cream cheese mixture along with the whipped topping. Stir just until blended. Spread over crust.
Refrigerate 4 hours or until firm. Serves 16
