Starlight Surprise Cookie Mix
2-1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup sugar
1/2 cup brown sugar
2 packages chocolate mint wafer candies (Andes candies)
In large bowl combine flour, baking soda, salt, and sugar and mix well. Pour into the bottom of a screw top glass jar. Place brown sugar into a small bag and place on top of the flour mixture.Unwrap the mints and place in another small bag. Place on top of the brown sugar. Screw jar closed and include this recipe:
1 cup butter, softened
2 eggs
1 tsp vanilla
1 jar cookie mix
In large bowl, combine butter and brown sugar from cookie mix and beat until fluffy.Add eggs and vanilla and mix until blended. Stir in remaining dry ingredients from cookie mix until blended. Cover and chill dough for 2 hours.Preheat oven to 375 degrees F. Shape about two teaspoons of dough around each chocolate mint wafer, making sure to cover the candy completely. Bake on ungreased cookie sheets at 375 degrees F for 9-12 minutes until light golden brown.
Let stand for 1 minute, then remove from cookie sheets and let cool on wire racks. Glaze with melted chocolate if desired, or top with nuts before baking.
Note: These are fabulous! Friends and family are getting this along with French Silk Mocha and my all-purpose spice mix.The latter item I give in mini canning jars and when they use it all up, they give the jar back so that I can fill it again for birthdays, anniversaries, etc…any occasion that they can think of for me to give them more
I had a hair appointment today and when I walked in the door Patti handed me an empty jar and said more please (she had used the last to make broiled short ribs last night and her dh said, “honey, the jar is empty. when do you see her again?
lol!). she thoughtfully brought me some ribs to sample
i guess i’ll have to give her some in time for thanksgiving!
that is the next excuse for giving something right?!! - November 15, 2013 at 3:59 pm #445147
