1 package of white cake mix
4 eggs
1 cup of vegetable oil
1 cup of 7-Up
One 3 3/4 oz. package of pistachio instant pudding mix
Combine ingredients in a large mixing bowl. Beat for 4 minutes. Pour into greased and floured 9 x 13 inch baking pan.
Bake in 350ºF. oven 30 to 35 minutes, cool.
FROSTING:
One 3 3/4 ounce package of pistachio instant pudding mix
1 1/2 cup of milk
One 8 ounce carton Cool Whip
Combine pudding mix and milk. Beat for 2 minutes. Fold in Cool Whip.
Spread over cake. Chill until served.
I am not sure if this is true St. Patty’s Day. But we used to make this every year.
