Sriracha Chickpea Salad Wraps- my go-to dirt cheap recipe for Lunch wraps.
1 15oz. can chickpeas
1/3 cup mayonnaise
1 1/2- 2 Tbsp sriracha
2 Tbsp chopped cilantro
1 tsp lemon juice
1/8 tsp salt
2 large flour tortillas
2 cups spinach
1 carrot, thinly sliced or shredded
1/2 bell pepper
Drain the chickpeas thoroughly and transfer them to a bowl. Add mayonnaise, sriracha, cilantro, lemon juice, and salt. Mash the chickpeas & mayo mixture until the consistency of chunky egg salad.
On a tortilla- add half of the spinach, carrot sticks, bell pepper, and sriracha chickpea salad. Fold the sides in toward the center, then roll from the bottom up, burrito style. These can also be refrigerated until ready to eat, up to 72 hours.
