Squash Casserole
6-8 Yellow Crookneck Squash
2 Eggs
1/2 C Milk
1/4 C Melted Butter
1 C Colby Jack Cheese
Bread Crumbs
Pre heat oven to 325F. Cube squash and plce in buttered 9X11 glass dish, sprinkle with salt and pepper. Add Milk, Eggs and 2/3’s of butter to a bowl and mix. Add cheese stir together and pour over squash. Sprinkle bread crumbs evenly and drizzle remaining butter over bread crumbs. Cover with foil and bake for 30 minutes. Uncover and bake until breadcrumbs are golden brown.
