These are our family favorite and they can be made ahead of time and frozen, then reheated in the microwave if desired! YUM!
2 (10 ounce) boxes frozen chopped spinach
2 cups herb stuffing mix, uncooked
1 large onion, chopped fine
4 eggs, beaten
3/4 cup melted margarine or butter
1 cup parmesan cheese
1 teaspoon McCormick’s garlic powder
1/2 teaspoon McCormick’s thyme or poultry seasoning
1/4 teaspoon McCormick’s pepper
Cook and squeeze all water out of the spinach.
Mix everything together and chill at least 2 hours.
Roll into 1 inch balls and place on a greased cookie sheet pan.
Bake 10-15 minutes at 350.
Do not over brown.
