Spinach
Have about 2 cups leftover? use it the the next recipe;-)
African Spinach Dish:razz:
1 large onion, chopped
1 green bell pepper, chopped
2 tbs peanut or vegetable oil
2 cups cooked spinach
1 tomato, chopped
1/2 tsp salt
1/4 tsp pepper
1/4 cup peanut butter
Cook onion and green pepper in oil in a skillet for about 3-5 minutes, or until tender. Add spinach and tomato. Cover and cook on low heat for about 5 minutes, or until spinach is heated through. Stir in remaining ingredients. Cook until hot throughout. 4 servings = about 220 calories.
