1 boneless skinless chicken breast, cut into 1-inch cubes
2 carrots, thinly sliced
1 cup cooked brown rice or quinoa
2 sliced green onions
red pepper flakes, to taste
In a medium bowl, whisk together sauce ingredients. Set aside.
Heat oil in a large nonstick skillet over medium heat. Add chicken, stirring occasionally so that all sides get browned. Once chicken has browned, add carrots and cook, stirring, until carrots are softened, about 5 min.
Pour in sauce and cook until sauce is thickened, 3 to 5 more min.
Spoon into bowls with rice or quinoa and sprinkle with green onions and red pepper flakes. Serves 2
