1 28-oz can of crushed tomatoes 1 10-oz can tomatoes with green chilies (spicy) or 1 14-oz can plain diced tomatoes 1 cup stock of your choice (I used low sodium chicken) 1/2 cup bagged frozen spinach, not thawed 1 T minced garlic 1 tsp dried onion flakes 1 T Italian seasoning S & P to taste
Combine all ingredients in a large pot and bring to a low boil over medium heat. Reduce heat to low, cover, and simmer at least one hour, stirring occasionally. Serve with Parmesan cheese and crusty bread.
(I also added some red pepper flakes – I like it really spicy!).
