Spicy Lemon-Lime Tabletop Fajitas
4 tbs vegetable oil, divided
juice from 1 lime
juice from 1 lemon
2 cloves garlic, minced
2 tsp cumin
1 tsp onion powder
2 tbs hot sauce
salt and pepper to taste
1 ½ lb steak, cut into strips
1 onion, sliced
1 cup cherry tomatoes, halved
1 yellow bell pepper, sliced
1 red bell pepper, sliced
8-12 flour tortillas
sour cream, for topping
any other desired toppings
In a bowl, whisk together 2 tbs of oil, lime juice, lemon juice, minced garlic, cumin, onion powder, hot sauce, salt, and pepper. Place steak strips into a resealable plastic bag or container and pour the mixture over the steak. Marinate in the refrigerator for at least an hour, or even overnight for the best results. In a skillet, cook steak at a medium to high heat for about 5 minutes on each side, or longer according to your preference. Set aside. With remaining oil, sauté onions, red and yellow bell peppers, cherry tomatoes, and more garlic if desired. Assemble fajitas and serve! Serves 8
