Spicy Corn Salsa 1 poblano pepper, finely chopped 1.25 cups leftover corn (more is okay, just may have to increase other ingredients a bit) 1 jalapeno, finely chopped 1/2 red onion, finely chopped 2 tbs fresh chives, chopped juice from 1 lime salt black pepper Place poblano and corn into a large bowl. Add jalapeno, red onion, chives and lime juice into bowl and mix together. Add salt and pepper to taste. Serve with tortilla chips.
