Spicy Beef Pies

      This is something that you can do one of two ways — I’ve done both and the recipients were quite pleased. You can give newlyweds the gift of a food processor, a baking sheet, and the recipe. Or make the pies and give them as a gift with the instructions for baking and, of course, the recipe. The latter gift is what I’ve gifted to friends and/or family having a bit of financial trouble and was well received whether it was for a birthday, holiday, or ‘just because…’
      Spicy Beef Pies
      Pastry:1 cup all-purpose flour
      1 stick unsalted butter, chilled and cut into 1″ pieces
      1/2 tsp baking powder
      1/2 tsp salt
      1 tsp fresh thyme leaves
      2 tbs ice water
      Spiced Beef Mixture:
      1/2 lb ground beef
      1 onion, peeled and diced
      2 cloves garlic, peeled and minced
      1/4 cup beef stock
      1/4 cup red wine
      1/2 tsp cumin
      1/2 tsp garlic powder
      1/2 tsp fresh thyme leaves
      1/2 tsp dried oregano
      1/4 tsp cayenne pepper (or to taste)
      1/2 tspblack pepper
      1/2 tsp salt (or to taste)
      1/4 cup chopped fresh parsley
      Make the pastry by adding the flour, butter, baking powder, salt and thyme to a food processor. Pulse a few times until the mixture resembles course crumbs. With the machine running, slowly pour the ice water through the feed tube and continue running just until a dough ball forms. Wrap in plastic and refrigerate for at least 1 hour.
      While the pastry is chilling, add the beef to a large saute pan along with the onions, garlic, cumin, garlic powder, thyme, oregano, cayenne, black pepper and salt.
      Cook until the beef is browned then stir in the beef stock and red wine. Continue cooking for another 5 min then stir in the parsley, remove from the heat and let cool.
      Pre-heat the oven to 400°.
      Roll out the pastry to about a 10″ piece and cut out 8 large (approx. 4″) circles. Fill 4 of the circles with equal amounts of the cooled beef mixture and top with the remaining 4 circles. Use a fork to crimp the edges and place on a baking sheet lined with parchment paper. Bake for 40-45 min or until the pastry is a light golden brown. Both the pastry and beef recipes can be doubled (for more giftsgiggle smiley). Serves 4
