Shrimp Cakes – loaded with flavor and the dipped into a spicy sauce that gives it a kick to your tastebuds. We love these

(approx. 6 cakes)
6 oz. large shrimp, peeled and deveined
1 green onion, finely chopped
1/8 C. diced red bell pepper
1 T.
finely chopped fresh cilantro
1 large egg
1/4 tsp. lemon juice
1/8 tsp. garlic powder
1/4 tsp.
old bay seasoning
12 ritz crackers, crushed
1/4 C. plain breadcrumbs
veg. oil for frying
Roughly chop the shrimp and place in a bowl. Add in the next 9 ingredients and mix well. Heat enough oil in a skillet to cover the bottom of the pan.
Drop the shrimp mixture by spoonfuls and pat out a little to flatten. Fry them for about 2 minutes per side, doesn’t take long at all, just make sure to adjust the heat so they don’t burn. Once they are golden brown, remove them to a paper towel lined plate.
Serve with the dipping sauce below or your favorite dipping sauce.
