Soy and flax muffins
Preheat oven to 350 degrees. First, combine:
3/4 cup soy flour
3/4 cup flax meal
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup splenda
Mix well. Then add:
2 egg whites
.75 cup water
1 tsp vanilla
Fill muffin tine 3/4 full. Bake at 350 for ~15 minutes. Makes 9 muffins.
