      This is one of my favorite recipes and so cheap and easy. The best part is that it only dirties one dish too! So here goes,

      Southwest Stew
      1 leftover chicken carcass (I consider this FREE!)
      1 1/2 cups pinto beans, (canned for a quick cook version or dried for a cheaper, healthier, version) (Canned $1 or dried .25)
      1 can rotel tomatoes (.75)
      1 onion, chopped (.15)
      3 garlic cloves, minced (.15)
      2 teaspoons salt (.05)
      1 8oz brick of pepper jack cheese, shredded ($2.50)

      Now here comes the hard part, 😀 throw everything into the crock pot and add about 3 to 4 cups of water to the mix. Cover and cook on high for several hours. If you used dried beans, you may need to let it cook for a while and add more water occasionally as the beans will absorb water as they cook.

      Right before you are ready to serve, add in the shredded cheese and stir until it is melted. It gives it a wonderful creamy, little hint of spice, kick.

      Dinner is served for a total of $3.85 if you took the cheap route with dried beans.

      The dish is even yummier topped with stale crushed tortilla chips (you know, the ones you find a the bottom of the bag and usually throw out) and shredded cabbage.
