Sweet Potato Bread- A light, spicy quick bread recipe that’s a great way to use up leftover roasted or boiled sweet potatoes. This recipe blurs the fine line between breakfast and dessert & I challenge you to eat just one slice!
2 cups white sugar
1 cup vegetable oil
2 cups mashed canned candied yams or 2 cups sweet potatoes
1 teaspoon vanilla
3 cups flour
1⁄4 teaspoon baking powder
1 teaspoon baking soda
1⁄2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon ground cloves
1 cup chopped walnuts
Preheat oven to 325 degrees.
In a large mixing bowl, combine sugar, oil, egg, sweet potatoes and vanilla.
In a separate bowl, mix all the dry ingredients (except for the walnuts) together well and add to wet ingredients.
Stir until just combined.
Fold in walnuts.
Pour into 2 standard loaf pans that have been lightly greased or sprayed with non-stick spray.
Bake undisturbed (do not open oven door) for 75 minutes or until thin knife inserted in center comes out clean.

Hmmm…breakfast, bread for country dinner, or dessert… I give up…it sounds good to me! LOL!
