1 Tablespoon – Ancho Chili powder
      1 Tablespoon – Smoked Paprika
1/2 Tablespoon – Chile Pequin (Use cayenne if you don’t have this)
1 Tablespoon Cacao, Nibs (Use 1 or 2 squares of 70% chocolate)
      1 Teaspoon Chile, Guajillo dried
      2 Teaspoons Cumin, seed ground
      1/4 Teaspoon Clove, ground

At first when I made this spice mix for my chili con carne I was indifferent. But the more I ate the more I liked it. The heat in the first mouthful was almost undetected, however it grows.

By the end of the bowl, the heat was there and stays with you for a period of time.
I used Mexican chilies for the mixture and added a bit of chocolate. The chocolate made it taste a bit like Mexican Mole (which I love). That will be another seasoning mixture.
I used 2 – 1/2 tablespoons of mixture for 1 pound of ground beef or pork or ckicken.

To me, the ‘sneak-up’ flavor is the essence of an excellent recipe! This could work in a number of recipes. Thanks!
