      South Beach Diet – Phase 1
      Veggie Quiche

      1 (10 oz) pkg frozen chopped spinach
      3/4 cup low fat shredded cheese
      3/4 cup egg beaters
      1/4 cup finely chopped bell pepper
      1/4 cup finely chopped onion
      3 drops hot pepper sauce (optional)
      1/4 cup diced zucchini

      1. Preheat oven to 350.
      2. Spray a 12 cup muffin pan.
      3.

      Cook spinach in microwave 2 1/2 minutes, (on high); Drain.
      4. In a large bowl, combine spinach, egg beaters, bell pepper, onion, zucchini, and pepper sauce. Mix well.
      5.

      Divide mixture evenly among the muffin cups.
      6. Bake at 350 for 20 minutes or until done-can test by using a toothpick inserted in middle.

      Makes 6 servings-2 per person
