Soft Pumpkin Cookies with Cream Cheese Frosting
1 cup sugar
1 cup canned pumpkin
1/2 cup shortening
1 T. grated orange peel
2 cups all-purpose or whole wheat flour
1 t. baking powder
1 t. cinnamon
1/4 t. salt
1/2 cup raisins
1/2 cup chopped nuts
Heat oven to 375. Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking soda, baking powder, cinnamon and salt.
Mix in raisins and nuts. Drop by rounded teaspoonfuls about two inches apart onto ungreased cookie sheet.
Bake until light brown, 8-10 minutes. Cool. Top with cream cheese frosting if desired.
Cream Cheese Frosting
1 package cream cheese (3oz.), softened
1/4 cup plus 2 T. margarine or butter, softened
1 t. vanilla
2 cups powdered sugar
Mix cream cheese, margarine and vanilla. Gradually beat in powered sugar until smooth and of spreading consistency.
