Smokey Garlic Soup 1 tbs olive oil 3/4 cup coarsely chopped onion 1 head garlic, separated into cloves, peeled 1/2 tsp smoked paprika 1 bay leaf 3.5 cups veggie broth 1 leftover baked potatoe peeled, chopped 1 green onion, thinly sliced Add olive oil to large sauce pan and heat over medium heat. Add onions, garlic, paprika and bay leaf to pan. Cook and stir 10 min or until onions are tender. Add broth and potato.
Stir. Bring to boil. Simmer on medium-low heat 10 min. Discard bay leaf.
Blend soup, in batches, in blender or food processor until smooth. Return soup to saucepan. Serve topped with green onions.
