Smoked Sausage
Prepare in your favorite manner and reserve about a cup sliced, about 1/2 inch for next recipe.
Sausage and Squash
reserved sausage
1 lb baby squash — zucchini, yellow, or pattypan
2 tbs butter
2 tbs white wine
salt and pepper to taste
pinch of fresh herbs of choice
Cover and simmer squash, butter, and wine over medium-low heat 4 minutes. Add sausage and continue to cook another 4 minutes. Remove squash and sausage. Boil remaining liquid about a minute or until reduced by about half. Pour over squash. Sprinkle with salt, pepper, and fresh herbs if desired. Serves 2.
