Slow Cooker Cilantro Lime Chicken is very inexpensive and simple to make, serve it in hot tortillas or tostitos with a salad for a complete meal.
This is a double meal, we usually make this in a huge batch, then freeze a batch for reheating later.
In a Crockpot, Dump the Following ingredients in the order given:
6 Large chicken breasts, cut into thin strips
3 Tbs olive oil
2 limes, juiced
1 cup cilantro, finely chopped
24 oz bag of frozen corn
4 tsp minced garlic (about 4 cloves)
1 finely chopped red onion
2 cans of black beans, drained and rinsed
2 tsp cumin
2 tsp chipotle powder
salt/pepper to taste
*1/2 c water or chicken broth for freezer meal.
Stir it all up with a spoon.
Cook on low about 8 hours.
If you want to make your own Make-Ahead OAMC (Once a Month Cooking) fill the freezer meal- combine the ingredients into TWO Gallon sized Ziplock bags or in a Vacuum Seal/ Food Saver Bag.
(the time might vary according to your brand of slow-cooker, some cook at slightly higher temps, so be aware of how long it normally takes for your cooker to work to avoid under or over-cooking your food!!)
Always spray your crockpot with non-stick spray before starting out to make clean up easier or line it with Crockpot liners.
