      Slow Cooker BBQ Chicken
      1/4 cup cornstarch
      1/2 tsp kosher salt
      1.5 lb boneless, skinless chicken thighs
      2 tsp olive oil
      1/2 cup barbecue sauce
      1/4 cup 100% apple juice
      1/2 red onion, sliced
      1 green or red bell pepper, sliced
      Place cornstarch and salt in a large re-sealable bag.
      Add chicken thighs, seal the bag, and shake to coat with cornstarch.
      Heat oil in a skillet or slow cooker with a browning function. Shake excess cornstarch from chicken and brown on both sides, 2-3 min.
      In slow cooker combine browned chicken, BBQ sauce, apple juice, onion, bell pepper. Stir to combine. Cover and cook on low for 8 hours or high for 4 hours. Shred meat with a fork before serving. Serves 6
