Skillet Chicken with Tomatoes 2 chicken breast halves and 2 chicken thighs 1 tbs olive oil 1/4 cup chopped onion 1/2 green bell pepper, thinly sliced 1 clove garlic, minced 14.5 oz diced tomatoes 1/2 tsp salt 1/2 tsp oregano 1 bay leaf pepper, to taste In a skillet, brown chicken in the oil. Add onion, green bell pepper, and garlic. Sauté until tender.
Add remaining ingredients. Bring to a boil. Cover and simmer for 30 to 40 minutes, until chicken is tender.
