Here’s a simple brunch casserole dish for the crockpot. It really doesn’t take long to throw it all together, it just seems like a lot of ingredients. It’s delish
1 large onion, finely chopped 1 1/2 pound ground beef, browned 2 tablespoons olive oil or butter 2 garlic cloves, minced 1 can (4-ounce) mushrooms, drained and sliced 2 teaspoons salt 1/2 teaspoon nutmeg 1/2 teaspoon oregano leaf 1/2 package spinach chopped frozen, thawed drained 3 tablespoons flour 6 eggs, beaten 1/4 cup milk, scalded 1/2 cup cheddar cheese, sharply grated
Heat the oil/butter, saute the onion, add the beef and brown it, drain if its fatty. Combine everything into the crockpot, give it a good swirl with the spoon to mix it together, cover and cook on low for 6 hours or so. It should be firm when done.
