tarragon green beans
2 pounds green beans, trimmed
1 tablespoon butter
1 tablespoon shallots, minced
1 tablespoon tarragon, roughly chopped
Salt and freshly ground black pepper, to taste
* Parboil the beans in salted water until tender to the bite, about 5 minutes. Drain. Saute the shallots in butter until tender, add the beans, and saute for 2 to 3 minutes, until warm.
Stir in the chopped tarragon, season with salt and pepper, and serve.
