We only have this dish once a year, Thanksgiving. Because we all are cutting back on fried foods.
Corn Meal Salt Pepper Zucchini Oil
In a sauce pan heat the oil over medium heat. Slice the zucchini into thin discs and place them in a bowl of cool water. In a separate bowl combine the corn meal, salt and pepper. Once the oil begins to boil dredge the zucchini in the corn meal mix, making sure to cover both sides liberally, then fry them in the oil until they are a crispy golden brown.
