Shrimp Salad with Quinoa and Avocado

      Give the gift to newlyweds of a large salad bowl, salad tongs, 4-6 salad bowls and the following recipe:Shrimp Salad with Quinoa and Avocado
      3 cups cooked and cooled quinoa
      1 tsp fresh lime zest
      juice of 1 fresh lime
      2 tbs rice wine vinegar
      2 tbs olive oil
      1 tsp cane sugar
      4 green onions, thinly sliced
      1/4 cup fresh minced cilantro (optional)
      1 ripe but firm avocado, peeled and cut in 1/2-in cubes
      1 lb cooked and cooled, preferably wild caught shrimp — peel, de-vein and boil for 3 min in salt water
      salt and pepper to taste
      Cook quinoa according to package directions.

      Cool in a large bowl. Zest lime and squeeze juice into bowl with cooled quinoa. Add sliced green onions, minced cilantro, cubed avocado and cooked shrimp.

      Gently stir to combine ingredients.
      Mix rice wine vinegar, olive oil and sugar in a small bowl until sugar dissolves. Pour over quinoa mixture. Gently stir to coat ingredients.

      Salt and pepper to taste.
      Chill for several hours before serving. Serves 4-6
