Seasoned Crowder Peas
1 tbs oil
1 clove garlic, minced
1 cup tomato juice
16-oz pkg frozen crowder peas, cooked according to package directions and drained
salt and pepper to taste
Heat oil in medium skillet and add garlic. Saute for 3 minutes. Pour in tomato juice and add crowder peas.
Let simmer for ten minutes and serve alone or over rice reserving one cup for next recipe. Add salt and pepper if desired.Crowder Peas and Eggs Burritos
1 cup reserved crowder peas
1/2 cup taco sauce or chunky salsa
1 cup shredded cheese
4 tortillas, warmed
Beat eggs. Spray medium skillet with Pam. Pour eggs into skillet and cook over medium heat.
Just as eggs start to firm pour in crowder peas and sauce. Reduce heat and continue cooking until eggs are done and all is heated through while stirring occasionally — about 2 minutes. Spoon onto heated tortillas and top with shredded cheese.
Fold tortillas into burritos and serve.
