Scotch Chocolate Cake
For the Cake:
- 2 cups flour
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup vegetable oil
- 4 tbs cocoa powder
- 1 cup water
- 1/2 cup buttermilk
- 2 eggs
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
For the Icing:
- 1/2 cup butter
- 4 tbs cocoa powder
- 6 tbs milk
- 1 lb box powdered sugar
- 1 tsp vanilla
- 1 cup nuts, chopped and lightly toasted
- 1 cup flaked coconut
For the Cake:
Preheat oven to 350°. Grease a 9 x 13″ pan.
Combine flour and sugar. Set aside. Put butter, oil, cocoa, and water in pan.
Bring to a rapid boil. Pour into flour and sugar mixture. Mix well. Add the last set of ingredients. Mix well.
Put into pan and bake for 30 min.
For the Icing
Bring butter, cocoa, and milk to a boil in same pan from above.
Stir to prevent burning. Remove from heat and add rest of ingredients.
Spread on hot cake. Serves 12-16
