Salmon Salad with Celery
16-oz can salmon, drained
1/4 cup onion, minced
1 stalk celery, minced — can include the leaves
1/4 cup light mayonnaise
1/3 cup sugar-free pickle relish
Optional: 3 tbs favorite herbs
Place the salmon in a bowl and break up with a fork.
Add the remaining ingredients and gently mix all together. Serves 4
